Authentic Balsamic Vinegar of Modena IGP

Italian Fine Foods LLC is proud to offer authentic premium quality and aged Balsamic Vinegar of Modena, all certified by the Mipaaf (Balsamic Vinegar of Modena Consortium for the Geographic Indication Protection - IGP) and authorized by the Italian Control Agency.

The grape must is the key ingredient that gives Balsamic Vinegar of Modena its unique flavor, characteristics and benefits. Its percentage added is the most important determinant of quality of such product, meaning that higher the percentage of grape must added equals a better quality.

Another trait of Balsamic Vinegar is its density, defined by the amount of grape must added to the red wine vinegar (the other ingredient of a Balsamic Vinegar of Modena).

According to the Balsamic Vinegar of Modena Consortium for the Geographic Indication Protection, the condition for a vinegar to be “Balsamic Vinegar of Modena” is that the minimum density requirement must be at least 1.060

In addition to 1.075 density, Italian Fine Foods LLC offers Balsamic Vinegars of Modena IGP of 1.18, 1.24 and 1.36 density being 1.36 the highest density for a Balsamic Vinegar of Modena IGP.

Most of the Balsamic Vinegars of Modena exported to U.S. taste similar to regular wine vinegar but with coloring due to their low density. However, the minimum density of Di Augusto Balsamic Vinegars is 1.075, higher than the minimum established by the IGP standards.
